So here's what I do: toast an English muffin. I use Ezekiel English muffins, but you can use any kind you like. Drizzle with olive oil. Sprinkle with nutritional yeast. Top with slices of avocado, slices of hard boiled egg, and chopped tomatoes. Add salt and pepper and enjoy! Meat eating friends, you could add a slice of bacon on there too!
With the egg, it reminds me of a Cobb salad on toast! It is dee-licious. Enjoy, and let me know if you try this!
